Prepared with carefully selected seafood of the day, this specialty draws out refined, richly concentrated flavors through meticulous preparation and slow simmering.

The chef’s soups are exceptional, prepared with great care and time using his own methods to draw out the full character of seasonal ingredients. One of the most popular is the new-season onion soup served from March to June, made without adding any water to concentrate its natural flavor.
