The Queen's Breakfast

Marie Antoinette style brioche and Madame du Barry style cauliflower espuma

This opening dish, inspired by "The Queen's Breakfast," features a light cauliflower mousse—a favorite of Madame du Barry, who was a beloved figure of Louis XV—layered on a Viennese-style brioche, reflecting the Queen's hometown.

Seafood and caviar cocktail with champagne jelly

Marinated avocado is paired with champagne jelly and garnished with seafood such as scallops, prawns, salmon, and caviar.
This is a gorgeously presented cocktail-style appetizer, worthy of being served in an 18th-century palace.

Bounty of the Sea

Inheriting the aesthetics of Versailles

Pompadour style pan-fried fresh fish

Dishes created by court chefs in the 18th century are often named after Madame de Pompadour, who was beloved by the king.
Enjoy the contrast between the crispy, fragrant skin and juicy flesh of this pan-seared fish and the beautifully arranged vegetables.

Along with the Imari porcelain that the queen loved

Black truffle-stuffed Koshu Jidori chicken with mousseline potatoes and forestière sauce

On an Imari ware plate, which was popular at the royal court at the time, we have depicted the queen's beloved "garden" with beautifully colored vegetables.
The free-range chicken demi-deuil (half-mourning dress), fragrant with black truffles, is served with two sauces of different colors.

A Spoonful of Memories

Petit vegetable and homemade vermicelli soup

This dish combines vermicelli and bouillon soup, said to have been a favorite of the queen, with chopped leeks and other small vegetables.
It is served before dessert, based on the anecdote that he requested it the day before his execution.

Petit Légumes

A gift from Vienna

Kouglof with strawberry sorbet

For dessert, we had Gugelhupf, a traditional Viennese pastry that Marie Antoinette loved dearly.
This elegant dish is adorned with strawberry sorbet, dried strawberries, and a jelly made from Riesling wine, which, according to legend, was popularized in high society by the queen.

Kouglof

Orange hot chocolate with Macaron de Nancy and small madeleines

Chocolate was a luxury item in the 18th century.
It is said that the queen enjoyed hot chocolate infused with orange blossoms, made by her personal chocolatier.
Enjoy it with the accompanying baked macarons and madeleines.

Exhibition "Marie Antoinette Style"

Marie Antoinette (1755-1793), arguably the most fashionable queen in history, became a "fashion icon" of her time. Her attire and interior design have had a wide-ranging influence on fashion, design, and film from the 18th century to the present day.
This exhibition explores the innovative spirit and personality of Marie Antoinette, who established a new style in every aspect, using her dresses, jewelry, and furniture as clues. Furthermore, it introduces how the source of the "style" she shaped has captivated people across generations and continues to inspire contemporary creators. This exhibition is a world tour planned at the Victoria and Albert Museum (V&A) in London. The Yokohama Museum of Art is the first and only venue in Japan to host it.
