"Azur," meaning the blue of the sky or sea in French, is the name of this restaurant located on the second floor of InterContinental Yokohama Grand. Its charm lies in the high-quality space designed by Parisian interior designer Pierre-Yves Rochon, which resembles a noble's mansion. Another attraction is that you can enjoy both classic dishes prepared using methods that return to the origins of French cuisine and specialties that offer a fresh take on basic ingredients. "Azur" traditional bouillabaisse

Based on a recipe inherited from Monsieur Francis Chauveau, the executive chef of InterContinental Carlton Cannes, the chef at Azure has evolved the flavors of Southern France. Using carefully selected seafood of the day, this Azur dish is prepared with meticulous care and slow simmering to bring out its elegant and rich umami to the fullest.
